WALNUT SISIG FRIED RICE ( Vegan, Gluten Free, and Soy Free)

Vegan food can be tasty and easy to prepare. Krizia Clemente, owner of I Can’t Believe It’s Vegan PH shares vegan recipes that you can easily make at home.

 

WALNUT SISIG FRIED RICE

Main Ingredients:

1 cup raw walnut meat

2 cups cooked brown rice (soaked 8-12 hours before cooking)

1 small onion (chopped)

2 Tablespoon vegan mayonnaise

3-5 cloves garlic (chopped)

Chili flakes (optional)

 

Prepare the ff: 

1)Walnut Meat

Ingredients:

  • 1 ½ cups walnuts (soaked for at least 4 hours and drained)
  • 1/8 cup coconut aminos (or soy sauce if you’re not soy intolerant)
  • 1 teaspoon calamansi juice
  • 1/3 cup chopped onion
  • 1 small sized carrot (peeled and chopped)
  • 1 celery stalk (chopped)
  • 1/8 teaspoon salt

Directions:

  • Combine all ingredients (except the coconut aminos and calamansi juice) in a food processor or chopper until the walnuts turn to tiny crumbs. Be careful not to over process, we want the crunchy texture.
  • Mix together the coconut aminos and calamansi juice then add to our food mixture.
  • Pour into a small bowl and set aside.

 

2)Vegan Mayonnaise

Ingredients:

  • 1 ½ cup cashews (soaked for at least 4 hours and drained)
  • ¾ cup water
  • 1 Tablespoon lemon juice
  • 1 ½ cloves garlic
  • ¾ teaspoon salt

Directions:

  • Combine all ingredients in a blender, and blend until it become smooth. You may add water, if needed, to facilitate the spinning.
  • Pour into a small bowl and set aside.

Main Directions:

1. Sauteé the onion and garlic in a frying pan until we get the garlic to crisp a bit and the onions to come into a clear color.

2. Add the raw walnut meat, sautee for a few minutes then add the vegan mayonnaise. The vegan mayonnaise adds creaminess to the dish.

3. Add the rice, combine and mix well.

4. Serve with some chili flakes or add more garlic crumbs on top.
